At home, we adore broccoli. Broccoli Soup, Broccoli Rice, and the reader’s favorite, Broccoli Tater Tots, are just a few of our favorites. In actuality, the recipe I’m sharing today is a variant of the air fryer-based tater tots recipe.

To prepare them at home, all you need are potatoes, cheese, and boiling sweet corn. Additionally, there are three different ways to cook them: baking, air frying, or deep frying.

I enjoy experimenting with a wide variety of veggies, particularly those with a bad reputation for being bland or uninteresting. These tasty experiments led to these bite-sized broccoli and corn balls. They are now a regular home snack.

What Are Broccoli And Cheese Balls?

You no longer need to look for a simple, vegetarian broccoli dish. You’ll never look at broccoli the same way after trying this delectable air fryer recipe for broccoli bites. A recipe for a dairy- and egg-free, vegan snack that kids (and adults) will like!

The Air fryer broccoli cheese bites have a crispy exterior and a cheese interior. These delectable appetizers get even more flavor from the dipping sauce.

I apologize if you are not familiar with the broccoli and cheese balls that are served at Greek pizza shops along the East Coast. As teenage vegetarians in my middle age, when we ordered food, we always opted for the deep-fried broccoli and cheese balls rather than the wings. They are deep-fried until crispy and golden balls made of cheese and chopped broccoli that have been battered.

They are typically served with ranch or sour cream. I was motivated by that to create a recipe for a vegan broccoli and cheese ball that to air fried just to create a less calorie version

Ingredients

  • 1 cup – Broccoli florets
  • 1 cup – Frozen corn or boiled corn
  • 1 cup – Potato (mashed)
  • 3 tbsp – Coriander leaves chopped
  • 5 tbsp – All-purpose flour
  • 2 tbsp – Green chilies chopped
  • 3 tbsp – Frozen corn (Little for that crunch in every bite)
  • 1/2 cup – Broccoli finely chopped
  • Salt to taste
  • 1 tsp – Black pepper powder
  • 1 cup – Vegan cheese cubes
  • 1 tsp – Garlic powder
  • 1 tsp – Dried basil
  • 1 tsp – Red chilly flakes
  • 1 tsp – Oregano
  • 2 tbsp – Cornflour
  • 1 big bowl – Panko (breadcrumb)
  • 200 gms – Vegan grated cheese
  • Slurry (5 tbsp All purpose flour and some water)


Broccoli  One broccoli head (300 grams, approx. In addition to the florets, use the stalks as well. They can be easily incorporated (hidden) in such recipes and are high in fiber.
Instead of cooking the broccoli in a lot of water, We enjoy the bite that raw broccoli has to offer. The broccoli is next carefully chopped on a cutting board as well as we will grind them along with the corns kernel.
You can of course saute the grinded and chopped broccoli on a pan for some time till they are roasted well. 

Potatoes – Peeled, crushed, and boiled. I advise grating your potatoes for the best outcomes. For this dish, you may also use leftover mashed potatoes.

Sweet Corn Before adding the corn to the broccoli and potatoes, defrost it completely if you used frozen corn.

Spices I have used garlic powder, salt to taste, black pepper powder, red chili flakes, dried basil, and oregano gives a fantastic flavor to these broccoli bites.

Bread Crumbs – Use good quality bread crumbs store-bought or you can just roast some bread on a pan and then grind them in a blender. You will get homemade bread crumbs easily.

All-purpose flour – It helps to bind the mixture and helps the cheese not to ooze out.

Corn flour – It helps all the ingredients to bind together well.

Cheese Cubes – Take any plain processed cheese cubes or vegan cheese if you are making it vegan.

Slurry – Make this with 4 tbsp all-purpose flour with 1/2 cup water. Make a smooth paste. It helps to stick all-purpose flour as well as bread crumbs to stick together well.

How To Make Corn Broccoli Cheese Balls Air Fryer Recipe Recipe Step By Step With Photo:

  1. Make a slurry made out of 5 tbsp all-purpose flour and 1/2 water. Mix well and make a smooth paste. Keep it aside. Note: You can blanch the broccoli for two minutes in boiling water until bright green. To stop the cooking process, remove and run under cold water.
  2. In a grinder, add frozen corn, add broccoli florets.
  3. Make a coarse paste
  4. In a large mixing bowl, add the broccoli and corn coarse paste, add potato mashed, processed grated cheese, little frozen corn, broccoli finely chopped, coriander leaves chopped and green chilies chopped.
  5. Add all-purpose flour, cornflour, salt, oregano, red chilly flakes, garlic powder, dried basil leaves crushed, and black pepper powder.
  6. Add panko breadcrumbs as per requirement. Give it a nice mix with the help of the spatula.
  7. On clean hands apply oil take a handful of proportion makes round balls.
  8. Then in the round ball make some place in the middle as shown.
  9. Place a plain or vegan cheese cube in the middle. Take a little more mixture and shape them round evenly.
  10. Prepare all in the same manner as shown and store them in the fridge for 20 minutes.
  11. Now for the assembling, we need the balls, panko (breadcrumbs), all-purpose flour, and slurry which we prepared earlier.
  12. Now coat the balls with all-purpose flour then dip the balls in the slurry and coat them nicely with panko (breadcrumbs).

  13. Again dip the balls in the slurry and coat them again with panko (breadcrumbs). Prepare all the balls in the same manner as shown.
  14. Deep fried method: Heat oil in a frying pan on medium-high heat  Drop cheese balls one by one with the help of a spatula slowly. Be careful not to spill hot oil. Fry four balls at a time till they are golden brown in color. Take out once they are crisp and golden brown from all sides. The stovetop method is ready to be served.

  15. Air fryer method:  Place 3 balls and brush some oil on top. Air fry them at 380° F for 20 to 25 minutes.
  16. After they are crisp and light golden brown take them out with the help of a spatula.
  17. Broccoli corn cheese balls are ready to be served.

Important Suggestions To Keep In Mind

  • Prior to frying a batch of snacks, the air fryer should always be preheated. A good three to five minutes at 180 degrees Celsius.
  • You can blanch the broccoli for two minutes in boiling water until bright green. To stop the cooking process, remove and run under cold water.
  • It is advisable to chill the patty mixture before air frying it in dishes like Broccoli Bites, Cutlets, or Tater Tots.
  • Simply form the balls and place them in an airtight container to prepare meals. They may also be frozen.
  • When you’re ready to serve, simply air fry. If the balls are frozen, let them defrost completely before placing them in the air fryer.
  • The temperature and timings may vary depending on the Air Fryer model. If the recipe calls for 20 to 25 minutes of cooking, make sure to open the basket after 15 minutes and flip the broccoli bites over once or twice. 
  • Never crowd the basket, as I constantly mention in all the Air Fryer recipes on the blog. It will take more time and not produce the desired outcomes. 
  • I could cook 15 broccoli bites in the air fryer at once. The remaining 5 I froze to use for wraps the following day. 
  • Always consume Air Fryer goodies as soon as possible.

Variations

Change broccoli for cauliflower. You may just sauté (sweat a little) a bag of pre-made cauliflower rice in a pan until it is soft. Before adding the mashed potatoes and forming them, let them cool fully.

When in season, sweet potatoes can be used in place of normal potatoes. It merely increases your fiber intake and keeps you full.
Herbs – Include a lot of herbs like dill, mint, or cilantro. Try experimenting with dry herbs like rosemary, oregano, and basil.
Since this recipe is dairy-free and vegan, I did not use cheese in it. If you’d like, you can add some shredded parmesan or cheddar cheese.
