WHAT ARE INDIAN BREAD ROLLS

These bread rolls, also known as Indian potato croquettes, are adored for their crunchy exterior and flavorful, spicy filling.

The filling is meticulously enclosed and enveloped in a moist slice of bread, forming a cylindrical roll. Subsequently, it undergoes deep-frying, baking, or air-frying and is served with either mint or cilantro chutney or tomato sauce.

While traditional preparation involves pan-frying or deep-frying, the modern approach of air frying is also an excellent choice for those seeking healthier cooking methods.

A HEALTHY COMPARISON: AIRFRYER V/S DEEP FRYING!

Opting to bake in an air fryer provides a significantly healthier alternative, allowing you to relish your treats without any guilt. Change remains the only constant, whether in life or food. We make adjustments to enhance our lives, so why not apply the same principle to food, particularly when it doesn’t compromise taste and texture?

AIR FRYER — PROS

  • The air fryer is renowned for its healthier cooking approach, which utilizes hot air circulation around the food.
  • Air-fried bread rolls are prepared with minimal or no oil, requiring minimal supervision during cooking.
  • This method ensures a mess-free experience, eliminating concerns about oil crumbs, smoke, or lingering odors in the house. Consequently, it provides an excellent means to reduce the fat and calories typically associated with frying in oil.

AIR FRYER — CONS

  • Air frying might require a longer duration compared to deep frying.

DEEP-FRYING — PROS

  • Deep frying offers a quicker method for preparing these delightful bread rolls.
  • When deep-fried accurately while maintaining a controlled temperature, the outcome is crispier rolls, with the bread absorbing minimal oil, preventing them from feeling excessively greasy or oily in taste.

DEEP-FRYING — CONS

  • The key factor to watch out for is the oil temperature.
  • When frying in oil, monitor and maintain a medium-hot temperature.
  • If the oil is not sufficiently hot, the bread rolls may absorb excess oil, resulting in sogginess.
  • On the other hand, if the oil is too hot, the outer covering of the bread will brown quickly, potentially leaving the stuffing undercooked.

What alternative fillings or stuffings can be employed within a bread roll?

As previously mentioned, potatoes are utilized for the stuffing. However, recipes are flexible, and you can choose any filling for these rolls. Here are some recommendations.

  • Potato Filling: Utilize boiled potatoes and incorporate seasonings and flavorings according to your preference. I favor curry seasoning, but you can opt for Italian herbs, a combination of black pepper and salt, or any seasoning of your liking.
  • Include peas in the potato mixture. Simply thaw and microwave the peas, then add them to the potatoes along with your preferred seasonings.
  • You can also incorporate paneer (Indian cottage cheese) into the potato mixture.
  • Cheese makes for a fantastic addition to this filling. Typically, I insert a cheese cube or sprinkle shredded cheese in the center of the stuffing and then build around it.
  • Feel free to include minced vegetables such as broccoli, cabbage, carrots, beans, and others in this stuffing.
  • Easily incorporate onions and garlic into the stuffing.

  • Vegetables — For a healthier twist, incorporate grated, boiled, or steamed veggies such as beans, sweet corn, beetroot, carrots, cabbage, etc. Additionally, you have the option to include tofu or paneer (cottage cheese) in the stuffing.
  • Other Protein — If you prefer a non-vegetarian option, you can prepare the stuffing with keema (minced meat). Ensure that the Keema mixture is dry and free from moisture.
  • Oven Baking — Alternatively, you can bake the bread rolls in an OTG oven or a conventional oven at 400°F for approximately 12 to 15 minutes. Simply brush them with some oil and arrange them on a baking sheet. Bake until they achieve a crispy and evenly browned texture.
  • Frying — While frying in oil, avoid overcrowding the pan to prevent potential breakage when flipping them.
