This Mexican rice is one of our favorite side dishes with any meals. It’s tasty, easy, and best of all, it cooks quickly in the Instant Pot.

A rice bowl loaded with vegetables and seasoned with taco seasoning is loaded with basmati rice, black beans or red kidney bean, corn, peppers, tomatoes, and taco seasoning.

Although I have enjoyed Mexican food here also in Toronto, I really liked it in the Bahamas. In fact, I was interested in Indian food first but Mexican food was my favorite for a long while during my stay in Toronto.

Making Mexican Rice in the IP even easier! Fewer ingredients, less prep work, and it’s just like coming to a restaurant!

And you get 4 lunch portions while only spending 15 minutes cooking, and you put some away for later!

A definite advantage with this recipe is that it’s a one-pot meal, which means less clean-up when it’s over as well. Fiesta rice is another one that is a simple dump-and-start Instant Pot recipe.

A quick and easy last-minute dinner option and versatile leftovers, this recipe is a must-have in your kitchen. It is one of our favorite Mexican Rice recipes because of its simplicity, flavors, and quick preparation.

This Instant Pot Mexican Rice recipe is all you need with only three simple ingredients and is as delicious as your favorite Mexican restaurant. Put this rice side dish alongside tacos, burritos, and wraps.

Mexican Rice can be made using any kind of rice but I thought that basmati would work well in this recipe. If you go with a different kind of rice, the water quantity might change too. That is why I prefer using basmati in this recipe.

Mexican cuisine is another of my go-to cuisines for everyday meals besides Indian, and one of my favorite Mexican recipes is Mexican Rice. A good Mexican meal is always a treat in our home.

I love Mexican Rice for lazy weeknights, it is quick, easy to prepare, and only takes about 30 minutes to make. I have been making it using my Instant Pot ever since the day I discovered it is a one-pot recipe.

With garlic, onions, jalapenos, peppers, and cilantro, this recipe is relatively straightforward. Corn may also be added. You can also squeeze lime juice on top!

The Mexican rice makes a great summer dish. First of all, it’s easy to make in an instant pot. Second, it comes out perfect every time! Second, this rice can be used with tacos or burritos as a main dish. I love that it is so versatile and easy to prepare!

What’s the point of cooking Mexican fiesta rice in an instant pot?

An incredible vegetarian dish flavored with tomato, spices, beans & colorful veggies. Flavored with tomato, spices, beans, and colorful veggies.

As a self-proclaimed foodie, leftovers don’t appeal to me much, however, I find myself eating this one the day after it was made. Yep, it’s that good.

Pour all ingredients into the Instant Pot. Add the water and stir. Cover tight. Cook under pressure for 5 minutes by pressing the pressure release button once the Instant Pot beeps. Serve the rice with your favorite toppings and enjoy!

Ingredients 

  • 1 cup – Basmati rice
  • 2 cup – Water
  • 1/2 cup – Onion chopped
  • 1/4 cup – Red kidney beans/ Black beans
  • 1 cup – Bell-peppers chopped
  • 1/4 cup – Frozen corn
  • 1 – Tomato chopped
  • 6 to 7 – Garlic chopped
  • 1/2 tsp – Cumin powder
  • 1 tsp – Chilly flakes
  • 1 1/2 tbsp – Taco seasoning
  • Salt to taste
  • 2 tbsp – Refined Oil

Rice – For the Mexican Rice recipe you can use any kind of white basmati rice. You can even use brown basmati rice for a healthier substitute. This recipe is best with only basmati rice.

Vegetables – The rice is loaded with vegetables such as bell peppers, carrots, tomatoes, corn, peas, green bell peppers, and yellow bell peppers. You can adjust the number of vegetables to suit your taste.

Add corn to any meal for a delicious and wholesome high-fiber diet. Corn is a natural antioxidant and a good source of fiber.

Red Jalapeno – The jalapeno gives the rice a perfect spicy compliment that adds an authentic taste to it. Adapt the amount according to your personal taste. I have garnished it once the rice has been done.

Tomato – Pureed or chopped tomatoes can be used to provide the mild acidity of tomato adds a certain tang to this mixed rice recipe.

Oil – Canola oil or vegetable oil, vegan butter, or even canola oil can be used to prepare the Mexican Rice recipe.

Taco seasoning – You can adjust the amount of taco seasoning to fit your taste and preferences. Jalapeno together with the taco seasoning adds the right heat to this recipe for Mexican Rice.

Stock – Vegetable or chicken stock can be used but, If neither of them is available, you can use plain water. However, stock adds a nice flavor and depth.

Other ingredients – In addition to the ingredients listed above, we will need garlic, onion, salt, pepper, and cumin powder. Added flavor and bright orange hue are possible by using Tomato Bullion Cubes or Powder.

How To Make Mexican fiesta rice – Instant Pot Recipe Recipe Step By Step With Photo:

  1. Wash the basmati rice thoroughly and then soak rice for 30 minutes in water. Drain out the water. Rice ready to be cooked.
  2. Take an instant pot. Open lid.
  3. Turn on saute mode for 30 mins. Hot mode started means ready.
  4. Add oil. Let the oil smoke. Add onion chopped. Saute the onions for 2 minutes.
  5. Add garlic chopped. Keep stirring. Fry till translucent.
  6. Add tomato chopped. Keep stirring. Add red kidney beans or black beans after washing and draining the water. Stir again.
  7. Add Frozen corn. Keep stirring.
  8. Add cumin powder, chilly flakes. taco seasoning, salt, according to your taste. Mix everything nicely.
  9. Add 1 cup water or stock mix and then add rice. Mix everything nicely.
  10. Add bell pepper. Mix everything nicely.
  11. Now press the cancel button. Close the lid. Turn the valve to sealing. Turn on the pressure cook button. Pressure cook for 6 minutes.
  12. After 6 minutes press the cancel button and then after 10 minutes of resting turn the valve to venting. You can avoid steam burn by using a kitchen cloth to move the value. Let the pressure release completely and the red plug goes down.
  13. Open the lid and then gently fluff the rice with a fork or spoon after 5 minutes. Take out the Mexican rice in a serving bowl and garnish it with red jalapenos.
  14. Ready to be served. I decorated it with vegan mayonnaise it tastes too good.

Important Suggestion To Keep In Mind

  • The cooking time and water amount will change in brown rice if you use it in place of white rice.
  • Black bean is mainly associated with Mexican cuisine and is often served in enchiladas, soups, and tacos. Black beans are rich in the minerals magnesium, iron, and folate.

Frequently Asked Questions

How to cook with Brown Rice?

You will need to increase the liquid ratio of water to cook brown rice in the Instant Pot. Brown rice needs more liquid per serving than white rice. Thus, you should add 3 times as much liquid as you would add white rice. Time will increase to 22 minutes.

There will be no change in the remaining ingredients or preparation process.

Can we use quinoa in place of rice?

It might work but I haven’t tried it. The liquid ratio would be the same, but the cooking time would be 1 minute (plus natural pressure release). The vegetables would be cooked through in 1 minute.

Serving Suggestions

Feel free to serve this Instant Pot Spanish Rice dish on its own for a weekend dinner or as a side dish with your Mexican brunch meal.

Storage Suggestions

Mexican Rice stores exceptionally well when made with the Instant Pot. Cool the rice to room temperature and keep it refrigerated for 4-5 days in an airtight container. It can also be stored in individual containers for meal prep.

Rice can also be frozen if it is transferred to freezer-safe containers. Freeze for up to 3 months. Thaw 4-5 hours ahead of time before reheating and serving.
