delightful peanut butter banana dessert. Those things, muffins? Is it oatmeal? They both exist! The delightful combination of peanut butter, banana, and oatmeal is served in muffin-style cups that were air-fried rather than baked here. They worked out really nicely!

If you usually rush out of the door in the mornings, these healthy baked oatmeal cups are a fantastic breakfast alternative! You can prepare them in advance for the coming week, giving you a simple grab-and-go snack every day.

Since banana oatmeal muffins or cups are well known for being filling, choosing this meal will satisfy you and keep you from feeling hungry for hours. I enjoy having them for breakfast, as a mid-afternoon snack, or as a small amount of pre-workout nutrition.

This quick and simple Air fryer oatmeal muffin recipe is a must-try if you like baked oatmeal, bananas, or peanut butter!

This delicious banana baked oatmeal muffin is a peanut butter lover’s dream because it is nearly entirely sweetened with ripe bananas and is sprinkled with pockets of chocolate chunks, raisins dried cranberry, and pockets of delightful peanut buttery bliss.

Ingredients

  • 2 – Banana ripe ones
  • 1 – Egg
  • 2 tbsp – Vanilla essence
  • 4 tbsp – Peanut butter (Melted in the microwave for 1 minute.
  • 5 tbsp – Honey or maple syrup
  • 3/4 cup – Milk
  • 1 1/2cup – Rolled oats
  • 1/2 cup – Almond flour
  • 1/2 tsp – Salt
  • 1/2 tsp – Cinnamon powder
  • 1 tsp – Baking Powder
  • 1/4 cup – Raisins
  • 1/4 cup – Cranberry
  • 1/2 cup – Semi-dark chocolates chopped.

Ripe Bananas: This delectable baked oatmeal with peanut butter and bananas may be made whenever you have ripe brown bananas on hand! Without the use of additional sugar, mashed banana acts as a natural sweetener, moisture source, and volume for this simple, healthful breakfast meal.

For the greatest outcome, I advise using really ripe bananas with plenty of brown spots or that are even mushy, as they provide a ton of flavor, even more so than unripe bananas.

Peanut Butter or Almond Butter (or nut/seed butter of choice): One of the main performers right here! Creamy peanut butter (or almond butter) not only gives baked oatmeal flavor and good fats, but it also gives it richness and keeps it well-held together.

Eggs: We use eggs to help fluff up the baked oats and keep the slices beautifully kept together. Two flax eggs can be used in place of the eggs if you are vegan or allergic to eggs (one flax egg is made up of one tablespoon of ground flaxseed and three tablespoons of water; therefore, you will need two teaspoons of ground flaxseed and six tablespoons of water). 

Non-Dairy Milk Or Plain Milk: Due to their high absorption capacity, oats require liquid to help them become sensitive and mushy. Use ordinary milk or a carton of non-dairy milk like oat milk, unsweetened almond milk, or soy milk.

Rolled Oats: Why everyone is gathered here? The majority of this recipe’s ingredients are old-fashioned or rolled oats. They are an excellent source of fiber and complex carbohydrates, making them the perfect choice for people who value whole grains and carbs. This simple baked oatmeal recipe is satisfying because oats are a particularly satiating food.

Ground Cinnamon & Sea Salt: This healthful meal is made much more alluring by the great warmth that cinnamon brings. The recipe feels big, robust, and tasty because of the way sea salt brings out each ingredient’s distinct flavor. Don’t forget to add sea salt!

Chocolate Chunks: This simple baked oatmeal recipe included chopped chocolate chunks which are of gooey chocolate and are my absolute favorite. Leave off the chocolate chunks for a lower sugar option or if you’re trying to avoid extra sugars.

Raisins and dried cranberry: These are my absolute favorite and you can add nuts also if you love them but optional.

Equipment needed to create banana oatmeal muffin or cups

You’ll need a cookie scoop or regular spoon, two mixing basins, nonstick spray or oil, 4 ramekin bowls or muffin tins, and these ingredients to make these muffins. Now that you have those ingredients, it’s time to start air frying!

How To Make peanut butter banana baked oatmeal cups Step By Step With Photo:

  1. Take 2 ripe big bananas in a bowl and mash them nicely with the help of a fork.
  2. Crack an egg into the mashed banana, add 2 tbsp vanilla essence, add melted peanut butter., add 1/4 cup honey or maple syrup., and add 3/4 cup milk.
  3. Now mix everything nicely.
  4. Now add 1 and a half cups of rolled oats.
  5. Now add half a cup of almond flour.
  6. Now add half tsp salt, half tsp cinnamon powder, and 1 tsp baking powder.
  7. Now mix everything nicely with the cut-and-fold method.
  8. Now add raisins, cranberry, and semi-dark chopped chocolates.
  9. Now brush nicely with butter in the ramekin bowl.
  10. Now put the batter mixture into it.
  11. Then add some chocolate chunks on top of it. You can also sprinkle little rolled oats.
  12. Now place it on the air fryer tray or basket whatever you have. Note: I have used a 32QT Large Air Fryer Oven so it took me 25 minutes but if you are using a regular round basket air fryer it may only take 10 to 15 minutes. 
  13. Now air fry them at 380 degrees F for 25 minutes. I have placed 3 ramekin bowls in my air fryer. Note: you can also put the batter mixture in muffin paper cups and air fry them.
  14. After 25 minutes take them out carefully with the help of oven gloves. Check with a tooth pic if it’s done inside. If not place for another 2 to 5 minutes till it’s done. Now let it cool for 15 minutes once taken out.
  15. Once it cools take them out with the help of a butter knife.

How to create an air fryer baked oats recipe banana peanut butter that is suitable for vegans

Hey vegans, fantastic news for you! Making these muffins into vegan-friendly delights is simple. An egg is the only non-vegan ingredient in this recipe. Here are some suggestions for egg substitutes you can use:

Flax seeds: Grind one tablespoon of flax seeds in a coffee or spice grinder to replace one egg. Next, stir in 3 tbsp of water. Stir the seeds until they have absorbed all the water and are thick.
Flax seeds that have already been ground: You should combine 2.5 tsp of pre-ground seeds with the water

Chia seeds: You can also use chia seeds! 3 tbsp water should be added to 1 tbsp of chia seeds. Before adding the chia seeds to the batter, let them soak up all the water, just like you did with the flax seeds. About 15 minutes will pass during this.

Applesauce: You can omit the egg and use 1/4 cup of applesauce instead.

Important Suggestion To Keep In Mind

  • You can take muffin paper cups in your air fryer basket also.
  • Alter your time and notice as the time of air frying muffins varies in round basket air fryer and air fryer oven. So keep a watch.
  • If you are air frying these muffins in a round basket-type air fryer then it will take less time compared to a 32 qt large air fryer oven.
  • For vegans, I have given substitute ingredients for these delicious muffins.
