Air Fryer Eggplant | Begun Bhaja

What Is Begun Bhaja?

The term “Begun Bhaja” in Bengali simply refers to ‘fry’ or ‘fried’ dishes. This encompasses a range of cooking methods, including pan-frying (shallow frying), air frying, deep frying, or batter-coating and frying (as in the case of fritters). Any vegetable prepared by shallow or deep frying with minimal basic spices is referred to as “bhaja.”

For instance, you can prepare “patol bhaja” (fried pointed gourd), “baingan bhaja” (fried eggplant), “aloo bhaja” (fried potatoes), “pumpkin bhaja,” “bitter gourd bhaja,” or similar vegetables. Even vegetables like plantain (raw banana), onion, and okra can be seasoned and fried, resulting in a dish known as “bhaja.”

In Hindi, frying eggplant is often termed as “tawa baingan fry.” Serving “begun bhaja” (fried eggplant) with dishes like “luchi” (deep-fried bread), “dal rice,” or simple “pulao” can change your perspective on eggplant – I assure you won’t dislike it.

  • 1 big – Eggplant
  • 1 ½  teaspoon – Salt
  • ½ teaspoon – Sugar
  • ¼ cup – All-purpose flour
  • 2 tablespoons – Semolina
  • 2 tablespoons – Rice flour

How To Select The Perfect Eggplant

Choose an eggplant exhibiting a deep purple hue, characterized by its glossy skin and noticeable weight, indicating optimal ripeness. Should you not intend to use it immediately, store the eggplant in a cool, dry location for a span of 1 to 2 days.

How To Make Instant Air Fryer Eggplant Recipe Step By Step With Photo:

  1. Cut the eggplant into slices that are ⅕ cm thick.
  2. Cut all the pieces evenly.
  3. Next, gently score both sides of the slices
  4. Arrange the sliced eggplant in layers within a colander on a plate or simply on a plate and evenly sprinkle ½ teaspoon of salt and sugar. Allow it to sit undisturbed for 30 minutes.
  5. When you’re prepared to fry the eggplants, get the batter ready. Combine all-purpose flour, semolina, rice flour, nigella seeds, the remaining ½ teaspoon of salt, and turmeric in a bowl.
  6. Whisk these ingredients together and gradually add water, little by little, until you achieve a batter with a thickness suitable for coating the eggplant slices.
  7. Whisk nicely and form a smooth batter without lumps.
  8. Air Fryer Method: Set the air fryer temperature to 400 degrees Fahrenheit and allow it to preheat for 5 minutes. Put parchment paper on the basket or tray whichever you are using and brush or spray generously with oil.
  9. Now take eggplant slices one by one and dip them in the batter.
  10. Coat both sides nicely.
  11. Take it out.
  12. Let’s remove the excess batter. Let it drip.
  13. Arrange the eggplant slices evenly within the air fryer basket or tray taking care not to overcrowd it. If necessary, consider air frying them in two batches for consistent frying results. Note: Mine is a large air fryer oven if using an air fryer basket with 2 slices then maybe 15 to 20 minutes will be enough for the brinjal fry to be ready. Flip in between to ensure even cooking.
  14. For extra crispiness brush or spray a little oil on top of the slices.
  15. Air fry for around 20 to 25  minutes, remembering to flip the eggplant slices midway through the air frying duration. To assess doneness, insert a paring knife into one of the eggplant cubes or slices; if it enters and exits effortlessly, it should be cooked. If not, continue air frying in one-minute intervals until it becomes tender.
  16. Place the cooked eggplant onto a plate. If desired, scatter some chopped parsley or coriander leaves chopped over it and add a subtle squeeze of lemon juice. Serve this crispy side dish with steamed rice with a dollop of ghee or butter while it retains its warmth. How to Make Them On Stove Top Or Pan Fry Method:

  1. Pan fry method: In a wok or skillet, add a sufficient amount of water for deep-frying the eggplant. Heat the oil over medium heat.
  2. Subsequently, coat the eggplant slice in the batter, allowing any excess to drip off, and then gently place it into the hot oil.
  3. Fry on each side for 2 to 3 minutes, or until it achieves a golden brown appearance.
  4. Remove it from the hot oil and place it on a wire cooling rack. Relish it while it’s still warm.

Important Suggestion To Keep In Mind

  • Air frying eggplant tips: Arrange the sliced eggplant in layers within a colander and lightly sprinkle it with a small amount of salt and sugar. The salt and sugar will aid in softening the eggplant’s texture by encouraging moisture release.
  • Additionally, it will enhance the eggplant’s seasoning. Set the colander on a plate. Allow the eggplant to sit undisturbed for 30 minutes, during which time you’ll observe a significant amount of water accumulating on the plate.
  • Slice Evenly: Try to slice the eggplant into uniform thickness to ensure even cooking.
  • Preheat the Air Fryer: Just like with an oven, preheating the air fryer for a few minutes before adding the eggplant helps with even cooking.
  • Use Cooking Spray: Lightly coat the eggplant slices with cooking spray before air frying. This helps in achieving a crispy texture.
  • Single Layer: Place the eggplant slices in a single layer in the air fryer basket. Avoid overcrowding to allow proper air circulation.
  • Seasoning: Season the eggplant slices with your preferred spices or herbs before air frying. This enhances the flavor.
  • Flip Halfway: Flip the eggplant slices halfway through the cooking time to ensure even browning on both sides.
  • Monitor Cooking Time: Keep an eye on the cooking time, as air fryers can cook faster than traditional methods. Adjust the time as needed to prevent overcooking.
  • Lightly Brush with Oil: For added crispness, you can lightly brush the eggplant slices with a small amount of oil before air frying.
  • Use Parchment Paper: Placing a piece of parchment paper at the bottom of the air fryer basket can help prevent sticking and make cleanup easier.
  • Check for Doneness: To check if the eggplant is cooked to your preference, use a fork or knife to test its tenderness. It should be fork-tender without being mushy.
  • Experiment with Seasonings: Get creative with your seasonings! Try various herbs, spices, or even a sprinkle of grated cheese for different flavor profiles.
  • Avoid Overcrowding: If you’re making a large batch of eggplant slices, it’s better to cook them in multiple batches to avoid overcrowding and ensure they cook evenly.
  • Serve Immediately: Air fryer eggplant is best enjoyed immediately after cooking to maintain its crispy texture.
  • Adapt Recipes: You can adapt your favorite fried eggplant recipes for the air fryer by making slight adjustments in cooking time and temperature.

Serving Suggestion

  1. Dipping Sauces: Serve the air-fried eggplant slices with an array of dipping sauces such as marinara sauce, tzatziki, hummus, or a yogurt-based dip.
  2. Sandwiches or Wraps: Use the crispy eggplant slices as a filling for sandwiches or wraps. Layer them with fresh vegetables, cheese, and your favorite condiments.
  3. Salads: Add the air-fried eggplant slices to salads for a crunchy and flavorful topping. They work well in both green salads and grain-based salads.
  4. Pasta Dishes: Incorporate the eggplant slices into pasta dishes. Toss them with pasta, marinara sauce, and some grated cheese for an easy eggplant Parmesan-style meal.
  5. Appetizer Platter: Create an appetizer platter featuring eggplant slices alongside other finger foods like olives, roasted red peppers, and cheese.
  6. Side Dish: Serve the eggplant slices as a tasty side dish alongside grilled meats, roasted chicken, or other main courses.

Storing Suggestion

Allow the cooked eggplant slices to cool down to room temperature before storing. Place them in an airtight container or resealable plastic bag. If you need to stack the eggplant slices, place a piece of parchment paper or wax paper between the layers to prevent them from sticking together. Store the container or bag in the refrigerator at a temperature of 40°F (4°C) or lower. The cooler temperature helps prevent bacterial growth.

Ideally, consume the stored eggplant slices within 2 to 3 days for optimal freshness and flavor. o reheat, use an oven, stovetop, or microwave. The oven or stovetop methods will help maintain the crispy texture better than the microwave. Note that the crispiness of the eggplant slices might diminish slightly when reheated, but they should still taste delicious.

If you want to store them for a longer period, you can freeze the air-fried eggplant slices. Arrange them on a baking sheet in a single layer and freeze until firm. Then transfer them to an airtight container or freezer-safe bag. Use them within 1 to 2 months for the best quality.

Remember that the texture of eggplant can change slightly upon refrigeration or freezing, so it might not be as crispy as when freshly cooked. However, they can still be a convenient and tasty option for future meals.
