  1. Preheat the air fryer to 400  degrees F. Lightly coat one or two loaf pans with non-stick cooking spray and line them with parchment paper. Set aside.
  2. In a saucepan over medium heat, combine white sugar, chopped apricots, raisins, and water.
  3. Bring to a simmer and cook for 10 minutes, stirring occasionally. Remove it from the heat and let it cool.
  4. Meanwhile, cream together butter, cream cheese, and vanilla extract.
  5. Add both eggs one at a time, mixing well after each addition. 
  6. Add the cooled apricot and raisin mixture, including the liquid. Mix well.
  7. Take a strainer and add the flour and baking powder, mixing thoroughly.
