About the Kairi Onion Cheese Fritters recipe
I have mixed South Indian and North Indian kairi onion cheese fritters as south Indian prepared with rice flour and north Indian prepared with besan (chickpea flour).
Whenever it rains here in India we glance forward for a few fritters mostly we call them bhajiya or pakoda or fritters here with tea. We patiently await monsoon season to urge some relief from that scorching heat which is sort of hot here and that we so await rain here and as soon as the sky pours heavily our heart screams for a few fitters and if it’s of onion we are all happy.
In summers raw mangoes are plenty here. These mangoes aren’t fully developed, therefore the seed is little and thin and therefore the firm flesh is crisp. They are sour in taste and provide a tangy flavor to our fritters here. They are very famous here for pickles so I assumed to give it some twist in my onion fritters. Why not add some mangoes and provides a tanginess to the present pakoda’s ๐
Generally in India, we mix herbs and spices to pakoda’s because it helps in digestion. Basically in any sort of pakoda’s or fritters ajwain (carom seeds) or hing is employed for added flavor also as digestion. I even have skipped here. you’ll add if its available in your kitchen.
Well my favorite time pass is to take a seat in balcony and have tea with family or friends along side a cup of tea and astray munch on some tea time snack. Its really a soothing time with a cup of chai and hot snack make me so happy and once I say snacks fritters top the list ๐.
For that extra flavor and a replacement twist, I added cheese in between which too mozzarella cheese to urge that extra cheesy pull.

Suggestion or Important Tips :
Some important tips and suggestion to form this yummyyyyyyyy !!!!!!!! fritters is that you simply can adjust the coating consistent with your preference. If you wish very crispy fritters then add less coating and if you would like a soft fritter then add a dense coating. If you would like you’ll skip adding water in the least to the besan (chickpea flour) batter because water gets squeezes from the onion and raw mango.
