That’s where twice baked potato recipes shine brightly. They effortlessly lend themselves to swift preparation and manage to exude an air of elegance that surpasses that of a regular baked potato.

With the aid of an air fryer, you can efficiently reheat and serve twice baked potato for dinner in a mere 15 minutes.

Potatoes never fail to delight my household, earning a well-deserved spot on our dinner table a remarkable 3 or 4 times a week. Easy Twice Baked Potatoes In Air Fryer

Looking to prepare a large holiday meal with limited oven space? Look no further than this fantastic Air Fryer Twice Baked Potato Recipe. It’s a delightful holiday side dish that can be effortlessly made using your air fryer.

Alternatively, if you’re in the mood for a delicious dinner or need a mouthwatering side dish to complement any meal, you can’t go wrong with these scrumptious cheesy bacon stuffed potatoes or you can also use chicken and prepared chicken stuffed potatoes. Prepare to have your taste buds tantalized and your cravings ignited, as these delightful cheesy bacon stuffed potatoes are guaranteed to leave you yearning for seconds.

What are Twice Baked Potatoes?

Twice-baked potatoes represent a beloved American side dish that combines the best of both worlds: velvety Creamy Mashed Potatoes and succulent baked potatoes. They earn their name from the two-step process involved: initially, the whole potatoes are baked to perfection; then, the flesh is carefully scooped out, seasoned to perfection, returned to the potato shells, and baked once more until achieving a delectably golden brown exterior. The outcome is a luxuriously creamy and indulgent stuffed potato that surpasses expectations, leaving a lasting impression worth sharing with loved ones.

Ingredients 

  • 4 – Russet potatoes
  • 1/2 tsp – Salt to marinate the potatoes
  • 2 tbsp – Olive oil to marinate the potatoes
  • 1 tsp – Black pepper powder to marinate the potatoes
  • 5 slices bacon(6 oz regular bacon, or 5-7 oz thick-cut bacon)
  • 2 tbsp – Butter
  • Salt to taste
  • 1 Cup – Cheddar cheese/Jack cheese shredded
  • 1 Cup – Parsley or chives chopped finely
  • 1/2 cup – Sour cream

Russet Potatoes – Choose potatoes of similar size for consistent cooking results.

Sour Cream Opt for full-fat sour cream to add a delightful tang to the filling. Alternatively, you can combine equal parts of sour cream and Greek yogurt for a different variation.

Bacon BitsUse Bacon slices to air fry and Ensure that you remove any excess grease from the bacon before incorporating it into the filling.

Cheddar CheeseOur preferred choice is extra sharp cheddar cheese, but feel free to experiment with your favorite cheese blend. For added tang and flavor complexity, you can also try a combination of half cheddar cheese and half bleu cheese.

Parsley Salt –  Enhance the flavor of the filling with this versatile seasoning blend, which imparts a delightful garlic and herb taste. Alternatively, you can create a simple mixture by combining equal parts of salt and garlic powder. Additionally, if desired, a touch of freshly cracked black pepper can also be incorporated.

How To Make Air Fryer Twice Baked Potatoes

  1. Thoroughly clean and rinse every potato before puncturing them multiple times with a fork. Place the potatoes in an air fryer tray or basket, then drizzle oil over them and sprinkle with salt. Proceed to gently rub the oil and salt onto each potato, ensuring they are evenly coated.
  2. Set the air fryer to a temperature of 400ºF and cook the potatoes for approximately 35-45 minutes, or until they are thoroughly cooked. Please note that the cooking time may differ based on the size of the potatoes and the specific air fryer model being used. I have multiple racks in my air fryer oven so I put the bacon slices in the top rack and the potatoes in the middle rack.
  3. Carefully take out the bacon after 8 minutes when they are absolutely crisp. 
  4. After 45 minutes take out the potatoes and allow the potatoes to cool for approximately 5 minutes, or until they reach a safe temperature to handle. You can keep on a cooling rack.
  5. In the meanwhile, chop the bacon strips finely with the help of a knife. Keep aside in two parts one to be mixed with potato filling and the other for topping on the baked potatoes.
  6. Cut the potatoes in half lengthwise with the help of a knife.
  7. Carefully scoop out the insides and transfer them to a bowl. Make sure to leave a portion of the potato attached to the skins to provide support and prevent tearing.
  8. In the bowl add bacon, cheese, sour cream, chopped parsley, salt, and pepper. Mix the ingredients together using a fork or a hand mixer until well combined.
  9. Now add the potato we scooped and mix properly with the mixture.
  10. Carefully spoon the potato mixture back into the potato skins, ensuring that each one is fully filled.
  11. Now top with a good amount of shredded cheese on top of the potatoes.
  12. Once again, transfer the prepared potatoes to the air fryer basket and continue air frying them at 400ºF for an additional 5 minutes. Note: If you have a big air fryer oven you can cook a large batch. But if you have a small basket then cook in multiple batches.
  13. After 5 minutes take out when the cheese melts.
  14. Garnish with a sprinkle of freshly chopped parsley and bacon. Serve hot.

Which Air Fryer is Best?

We have the advantage of having 2 air fryers, allowing us to thoroughly test air fryer recipes. However, the choice depends on your specific requirements. It’s important to note that not all air fryers are identical, so it’s beneficial to familiarize yourself with your particular air fryer. Keep an eye on your food to monitor its progress and make necessary adjustments to recipe timings as needed.

Basket Style Air FryerWe are equipped with the 5.8 Qt Cosori Air Fryer, a compact appliance that occupies slightly less counter space. It proves to be an excellent fit for our family of 4, and it offers the added advantage of effortless cleanup. The air fryer basket and liner are dishwasher-safe, providing the easiest and most convenient cleaning experience.

Toaster Oven Style Air Fryer – We own a Toaster Oven Style Air Fryer, which may occupy slightly more space but is ideal for larger families as it allows you to cook most recipes in a single batch. Depending on the specific model, it may also offer faster cooking times. For example, when I cooked bacon, it took 8 minutes in the toaster oven style compared to 9 minutes in the basket style.

Important Suggestions To Keep In Mind

  • To prevent the potatoes from bursting on the first bake, you must poke holes or slice slits in each one in several places. This vents the potato and prevents internal pressure (and a mess) from building up. 
  • In some instances, your twice-baked potatoes may become prone to falling apart. This can occur if you remove an excessive amount of the potato flesh, causing the skins to become fragile. To prevent this issue, ensure that you leave approximately a quarter of an inch of the flesh intact when scooping out the insides. This will help maintain the structural integrity of the potatoes.
  • For optimal results when scooping the potato flesh for twice-baked potatoes, we recommend using a large spoon. The smooth backside of the spoon will act as a helpful guide, allowing you to achieve a smooth surface on the potato skins, which is ideal for stuffing.
  • Freezing twice-baked potatoes is not advised, as cooked potatoes do not thaw well and tend to become gummy when reheated. It is recommended to enjoy them fresh or refrigerate them for a short period if needed.

Whether or not you need to preheat your air fryer depends on the specific model you have. While some air fryers recommend preheating, it is not necessary for cooking bacon.

Is it advisable to add oil to the bacon?

Since bacon naturally releases grease while cooking, there is no need to spray the bacon or the tray of the air fryer with oil for cooking.

How to prevent bacon smoking?

To avoid any smokiness when cooking bacon, it is recommended to air fry at a temperature of 350˚F, as the smoke point of bacon fat is around 400˚F. If you are cooking bacon in batches, remember to drain the drip pan of any accumulated oil and wipe it clean using a paper towel to prevent excessive smoke.

After trying to cook bacon in the Air Fryer just once, it is likely to become your new preferred method. The bacon turns out perfectly crisp every time, thanks to the circulating air. Moreover, there is no need to flip the bacon halfway through the cooking process, further simplifying the cooking experience.
