- 2 – Egg
- 15 – Spinach leaves
- 1 – Avocado slices (ripe)
- 4 – Paneer slices/ Tofu Slices
- 2 – Cheese slices
- 4 – Tomato slices
- 1 tsp – Red chilly flakes
- 1/2 cup – Cheddar cheese (diced)
- Pink salt to taste
- Black pepper powder
- Olive oil for frying
Instructions
- In a chopper add all the spinach leaves.
- Add 2 eggs into the blender.
- Add 1 tsp red chili flakes.
- Now add a little salt to taste.
- Cover the lid and chop nicely.
- Now the spinach mixture is ready.
- Heat a pan and add 1tbsp olive oil
- Spread oil with a brush.
- Pour the spinach egg mixture.
- Cover and cook for 5 minutes.
- Remove the lid after 5 minutes.
- You can see little bubbles which means the crepe is half done
- Add grated cheese to the crepe on one side.
- Place tomato slices on the grated cheese.
- Sprinkle with black pepper powder.
- Sprinkle pink salt to taste.
- Place 2 cheese slices on top of the tomatoes.
- Place avocado slices on cheese.
- Place 2 paneer slices on top of the avocado.
- Sprinkle black pepper powder and pink salt on paneer slices.
- Fold one side of the crepe with the help of a spatula.
- Take out the crepe and prepare another stuffed crepe.
- Slice the crepe with the help of a knife.
- Delicious hot spinach crepes are ready to be served.

- For making these crepes, you’ll need a blender and a skillet (we recommend cast iron). I think that’s it!
