For Pasta:
- 1 & 1/2 cups – of farfalle Pasta or your favorite pasta
- 1 cup – English Cucumber thinly sliced seedless
- 1 pint – Cherry tomatoes sliced
- 1 cup – Finely chopped red onions
- 2 tbsp – Packed fresh parsley chopped for garnish
- Fresh ground pepper
- Olive oil
- Croutons with salt & Pepper
Avocado Dressing::
- 2 – Avocado
- 1 – Lemon Juice
- 1 tsp – Salt
- 1/2 tsp – Black pepper powder
- 1 tbsp – Ginger powder
- 2 tsp – Garlic powder
- 1/4 tsp – Chili flakes optional
- 1/4 cup – Fresh or dried parsley chopped
- 5 tbsp – Vegan mayonnaise
- 2 tbsp – Fresh cilantro chopped
Instructions
- Boil 2 & 1/2 cup water in a pan for 5 minutes. Add 1 tbsp salt and 5 tbsp olive oil to the water.
- Mix it nicely Then add the farfalle pasta. Let it boil for 10 minutes.
- Let’s prepare Avocado lime dressing: Take the avocados and remove the skin and take out the avocado slices and put them in a food processor.
- Now add vegan mayonnaise, black pepper powder, dried or fresh parsley (add half keep the rest for pasta), add chili flakes, add garlic powder, ginger powder, and lime or lemon juice.
- Make it into a fine puree.
- Now add 3 tbsp olive oil and again grind into a fine puree.
- Your avocado lime dressing is ready. Take it out in a bowl or glass.
- Now take out the pasta after 10 to 15 minutes once boiled.
- Rinse with water and drain the water out. Take it out in a bowl.
- Now heat vegan butter in a pan or tawa. Melt the butter. Then add bread slices and fry for 3 minutes on medium flame.
- Fry till lightly golden brown and then sprinkle some salt and pepper. Take them out and keep them aside.
- Now in a large salad mixing bowl add pasta, sliced English cucumber, sliced red onions, avocado dressing, salt to taste, black pepper powder, parsley chopped, and sliced cherry tomatoes.
- Now with the help of 2 spatula mix everything nicely.
- Now add the croutons and serve immediately. Delicious cucumber tomato pasta salad is ready.
