Description

Namak Pare is a crispy snack which is mostly enjoyed with evening tea. They are a crunchy savoury snack very famous all over India.


Ingredients

Scale
  • 2 cup– Whole wheat Flour/ Atta
  • 1 cup– All Purpose Flour/ Maida
  • 2 tbsp– Fine Semolina/ Sooji
  • 1 tbsp– Salt
  • 1 tbsp– Sugar
  • 1/2 tbsp– Kalonji / Ajwain
  • 3 tbsp– Ghee melted hot
  • Oil for frying

Instructions

  1. In a bowl add atta, maida, sooji, salt, sugar, ajwain, or kalonji. Mix everything well. Now add melted hot ghee and mix with a spoon. Be careful not to mix with hands as the ghee will be very hot initially. After mixing for some time you can mix with your hands.
  2. Add water slowly at a time and mix to make a tight dough.
  3. Cover the dough with a cloth and keep aside for 10-15 minutes.
  4. Heat oil in a heavy bottom pan.
  5. Divide the dough into 2 equal portions and roll each in a thin circle.
  6. Cut the circle in long rectangles, diamonds, or squares whatever you like with help of a knife or pizza cutter.
  7. Heat oil for frying in a deep pan and when it is hot, simmer the heat.
  8. Fry the namak pare on low flame till golden brown.
  9. Keep in mind that they will continue to become brown a little even after taking out.
  10. Remove from oil on a tissue on a plate.
  11. Cool and store in an airtight container for up to 10-20 days.

Notes

  • Heat the oil nicely first on high flame then switch to low.
  • After you lower the flame, add them in batches and fry them till they are golden brown.
  • Make sure the dough is stiff like a Poori dough.
  • Mix oil or ghee in the dough until it is incorporated well.
  • You can add spices according to your choice.
  • Fry them on low heat only to make them crunchy.
  • Drain excess oil by putting them on Kitchen tissue
  • The Nigella seeds are very important to give that authentic flavor to those Namak pare. But you can add cumin seeds if you like.
