Namak Pare is a crispy snack that is usually enjoyed with evening tea. They’re a crunchy savory snack very famous everywhere in India. They’re mostly diamond-shaped and commonly have many names like Namak Pare, Nimki, Kucho Nimki, Namkeen, etc. It’s a deep-fried snack that is extremely famous among Indian kids.

They are an excellent deep-fried snack but yes you can bake them too. Except for the frying in batches, it takes very little time.

In India, during the Diwali festival time, we are overloaded with sweets. So to balance that sweetness we’d like a savory snack. That’s why Namak pares are formed. Basically, a standard size Namak pare is diamond-shaped which Bengalis make during the time of Durga puja. The rest of India make them at the time of Holi and Diwali needless to say.

You can prepare this snack well beforehand at a festival time so that once your guests arrive you can serve them this great munching snack without wasting any time.

You can shape them as you wish and may make a mixture of all-purpose flour and whole wheat

How can we store them?

After it is cooled to room temperature you can store it in an air-tight container. They can be stored for up to one month.

Important Suggestion To keep in mind

  • Heat the oil nicely first on high flame then switch to low.
  • After you lower the flame, add them in batches and fry till their golden brown.
  • Make sure the dough is stiff – sort of a Poori dough.
  • Mix oil or ghee within the dough until it’s incorporated well. But if vegan use any vegetable oil.
  • You can add spices consistent with your choice.
  • Fry them on low heat only to make them crunchy.
  • Drain excess oil by putting them on Kitchen tissue.
  • The Nigella seeds are vital to offer that authentic flavor to those Namak pare. But you may add cumin seeds if you wish.

Can you bake them?

Obviously, we can. However, I recommend deep fry them instead of baking them. If we bake them we’ll need to compromise on the taste of those Namak Pare.

But as they’re very addictive it’ll always be a far better idea to bake them. You can then munch on this crunchy snack without ever feeling very guilty.

You can make a stiff dough by mixing ghee or oil, Nigella seeds or carom seeds, and salt. After 20 minutes, roll the dough into a thick circle.

Slice them with the assistance of a pizza cutter or a knife then arrange them on a baking sheet. Then put them in the oven. You may want to spray a touch of oil or brush them. It’s fine even if you don’t.

Bake them at 375 degrees Fahrenheit for 15 minutes and check once. If you find it satisfactory, you can flip them with the help of a spoon or a tong. Take care and wear gloves while removing from the oven.

Then cool them at room temperature and store them in an airtight container.

Serving Suggestion 

Crispy and crunchy Namak pare can be served with hot ginger tea or cardamom tea.

How to make Namak Pare step by step with photo :

1. In a bowl add whole wheat flour, all-purpose flour, sooji, salt, sugar, ajwain, or kalonji. Mix everything well. Now add melted hot ghee(Use vegetable oil if vegan) and mix with a spoon. Be careful and don’t mix with your hands as the ghee will be very hot initially. After mixing for some time with a spoon you can mix with your hands.

2. Add water slowly at a time and mix to make a tight dough.

3. Cover the dough with a cloth and keep it aside for 10-15 minutes.

4. Heat oil in a heavy bottom pan.

5. Divide the dough into 2 equal portions and roll each in a thin circle.

6. Cut the circle in long rectangles, diamonds, or squares whatever you like with help of a knife or pizza cutter.

7. Scrape them with the help of a knife.

8. Heat oil for frying in a deep pan and when it is hot, simmer the heat. Put one slice to the first check if the oil is hot. If it comes up instantly means now is the right time to add other slices.

8. Add them in small batches and fry them on low flame till golden brown. Stir occasionally so that they get fried evenly.

9. Keep in mind that they will continue to become brown a little even after taking out.

10. Remove from oil on a tissue on a plate.

11. Cool and store in an airtight container for up to 10-20 days.

Ingredients

  • 2 cup– Whole wheat Flour/ Atta
  • 1 cup– All Purpose Flour/ Maida
  • 2 tbsp– Fine Semolina/ Sooji
  • 1 tbsp– Salt
  • 1 tbsp– Sugar
  • 1/2 tbsp– Kalonji / Ajwain
  • 3 tbsp– Ghee melted hot
  • Oil for frying
