  1. Wash and drain the okra, ensuring thorough drying with a kitchen towel for each piece. Trim the tops and bottoms of the okra, then slice each one into quarters lengthwise. For thicker okra, consider cutting it into six pieces lengthwise.
  2. In a medium-sized mixing bowl, combine the sliced okra with turmeric, red chili powder, garam masala, salt, gram flour, rice flour, and carom seeds. Ensure thorough mixing.
  3. Incorporate lemon juice and water into the mixture, ensuring an even coating of all ingredients on the okra. Introduce the oil and mix thoroughly once more.
  4. Introduce the water and oil, and mix thoroughly once more.
  5. Gently coat the air fryer basket with cooking oil spray. Arrange the okra evenly in the basket, avoiding overcrowding. It’s acceptable to have a slight layering, but aim to spread them out as much as possible within the basket.
  6. Set the air fryer to 350°F and cook for approximately 10 minutes. Shake the basket, or scrape with a fork on the air fryer tray if using, and lightly spray the okra with oil. Continue cooking for an additional 2 minutes at 370°F.
