Kaju Katli Recipe | Indian Cashew Fudge

Description

Kaju Katli Recipe is a very high price Indian sweet but this recipe is without sugar syrup and cooks instantly with very little effort. A delicious gift for occasions to friends and family.


Ingredients

Units Scale
  • 250 gms – Cashew roasted and unsalted
  • 1/2 cup – Milk powder or 1 1/2 tbsp cornstarch if vegan
  • 1/2 cup – Powdered sugar
  • 1 tsp – Ghee 1 tsp – rosewater/kweda water or 1/2 tsp cardamom powder
  • 3 tbsp – milk (room temperature)
  • Chandi vark (Silver leaf) for decoration
  • Vegan butter or ghee for greasing butter paper

Instructions

1. In a blender add cashew in 2 batches and grind into a fine powder. Sieve it with help of a sifter and press it frequently with the help of a spoon.

2. And finally while grinding in batches if there are larger cashew pieces left then collect them and again grind in powder. ( Do not skip this process to get a smooth finish to this kaju Katli)

3. Now add milk powder or corn starch and sugar. Combine well. Make sure there are no lumps.

4. Now add rose water, then gradually add milk or water and knead to a tough dough. Apply 1/2 tsp of ghee or coconut oil and knead again.

5. Grease ghee on parchment/butter paper. Place dough. Apply ghee or vegan butter on the top surface of the dough.

6. Now again place butter paper on top of the dough. Now roll with a rolling pin into a large disc. Apply silver leaf on it (optional).

7. Cut with a knife or pizza cutter in a diamond shape.

8. Kaju katli is ready to serve.

Notes

  • Remember not to grind the cashew too much as cashew will release oil and we do not require that.
  • Always try to use a spice blender to grind this cashew into a fine powder. 
  • Always use ghee to make the mixture smooth so I will strongly recommend it but it’s optional too.
  • Always use butter paper while rolling the cashew dough, it avoids the dough to gets sticky.
  • You can use little water instead of milk while kneading the dough.
  • You can use little cardamom powder instead of kweda or rose water whatever is available in your kitchen.
