Description

Air Fryer Stuffed Mashed Potato with meat and vegetable filling is delicious. They are easily fabricated. But, it will take you around 45 minutes.

Instructions

  1. Clean and wash potatoes and then peel off the skin of the potatoes.
  2. Cut the potatoes into cubes.
  3. Boil water in a pan and add the potato cubes.
  4. Add 1 tsp salt.
  5. Then mix salt with water and potatoes.
  6. Cover and cook for 10 minutes on medium-high flame.
  7. Open the lid after 10 minutes and check with a fork if the potatoes are soft and boiled. Turn off the flame and drain the water and keep the potatoes aside.
  8. Now cut the white or red onion into fine slices.
  9. Heat 2 tbsp olive oil in a pan and add the chopped onions.
  10. Saute the onions till they are translucent.
  11. Now add finely chopped red and yellow bell peppers.
  12. Now fry it on a medium flame for 5 minutes.
  13. Now add turkey or chicken mince to it. 
  14. Fry till it’s cooked for around 10 minutes. 
  15. Now add all the spices like red chili powder, paprika powder, onion powder, garlic powder, dried oregano, black Pepper Powder, and salt to taste.
  16. Now mix everything nicely.
  17. Now add the spinach leaves.
  18. Now cover for 3 minutes.
  19. After 3 minutes open the lid and stir nicely.
  20. The mixture is done now turn off the flame and take out the mixture in a bowl. Keep aside.
  21. Now take the boiled potatoes and mash them with the help of a masher.
  22. Now crack an egg in a small bowl.
  23. Beat the egg nicely now add it to the mashed potatoes.
  24. Now mix it nicely.
  25. Now add grated mozzarella cheese and sprinkle a little black pepper powder.
  26. Now mix everything nicely.
  27. Now take an air fryer basket or tray place a parchment paper and now add the mashed potato mixture and shape it into a pillow as shown below.
  28. Now place the chicken mixture we prepared on the potato pillow.
  29. Now again top it up and cover it with mashed potato in the shape of a pillow.
  30. You can brush it with egg wash to get a nice golden brown color while air frying or baking but that’s optional. Now Air fry them at 400 degrees F for 25 to 30 minutes.
  31. Take out after they are nicely golden brown on top it’s ready to be served.
