Description
Air Fryer Stuffed Mashed Potato with meat and vegetable filling is delicious. They are easily fabricated. But, it will take you around 45 minutes.

- 10 Medium – Potatoes
- 1/4 Medium – White or Red Onion finely chopped
- 1/4 Medium – Red bell pepper finely chopped
- 1/4 Medium – Yellow bell pepper finely chopped
- 200 gms – Chicken or turkey mince.
- 1/4 tsp – Red chili powder
- 1/4 tsp – Paprika
- 1/4 tsp – Onion powder
- 1/4 tsp – Garlic Powder
- 1/4 tsp – Dried oregano
- 1/2 TSP – Black Pepper Powder
- Salt to taste
- 50 gms – Spinach leaves
- 1 medium – Egg
- 1/4 cup – Mozzarellaa cheese
- 1/2 tsp – Black pepper powder
- Oil for brushing and frying.
Instructions
- Clean and wash potatoes and then peel off the skin of the potatoes.
- Cut the potatoes into cubes.
- Boil water in a pan and add the potato cubes.
- Add 1 tsp salt.
- Then mix salt with water and potatoes.
- Cover and cook for 10 minutes on medium-high flame.
- Open the lid after 10 minutes and check with a fork if the potatoes are soft and boiled. Turn off the flame and drain the water and keep the potatoes aside.
- Now cut the white or red onion into fine slices.
- Heat 2 tbsp olive oil in a pan and add the chopped onions.
- Saute the onions till they are translucent.
- Now add finely chopped red and yellow bell peppers.
- Now fry it on a medium flame for 5 minutes.
- Now add turkey or chicken mince to it.
- Fry till it’s cooked for around 10 minutes.
- Now add all the spices like red chili powder, paprika powder, onion powder, garlic powder, dried oregano, black Pepper Powder, and salt to taste.
- Now mix everything nicely.
- Now add the spinach leaves.
- Now cover for 3 minutes.
- After 3 minutes open the lid and stir nicely.
- The mixture is done now turn off the flame and take out the mixture in a bowl. Keep aside.
- Now take the boiled potatoes and mash them with the help of a masher.
- Now crack an egg in a small bowl.
- Beat the egg nicely now add it to the mashed potatoes.
- Now mix it nicely.
- Now add grated mozzarella cheese and sprinkle a little black pepper powder.
- Now mix everything nicely.
- Now take an air fryer basket or tray place a parchment paper and now add the mashed potato mixture and shape it into a pillow as shown below.
- Now place the chicken mixture we prepared on the potato pillow.
- Now again top it up and cover it with mashed potato in the shape of a pillow.
- You can brush it with egg wash to get a nice golden brown color while air frying or baking but that’s optional. Now Air fry them at 400 degrees F for 25 to 30 minutes.
- Take out after they are nicely golden brown on top it’s ready to be served.
