About Egg Cabbage Pancake With Mediterranean Dip Recipe

If you enjoy pancakes but want to try something different, this cabbage pancake is the ideal meal. It is significantly healthier and lighter than the typical morning fare because it is made with cabbage, eggs, and no sugar. If you’re looking for low-carb, keto-friendly meals, this is a terrific choice because you receive the vitamins and minerals from the cabbage while reducing the sugar. It is just like any Japanese Cabbage Pancake. You can add ingredients vegetarian or non-vegetarian according to your choice.

You must try this Mediterranean Dip if you’re searching for a party appetizer that will feed a crowd and impress them. It is the ideal dish for entertaining all season long because it is made with vivid, fresh ingredients.

Ingredients

  • 1 big – Onion sliced in fine julienne
  • 1 big – Potato sliced in fine julienne
  • 1 big – Green bell peppers cut in fine julienne
  • 1 medium – Carrot cut in fine julienne
  • 1/2 – Cabbage cut into thin slices
  • 2 – Eggs
  • 1/2 cup – Spring onion
  • 1/2 cup – all-purpose flour
  • Salt to taste
  • Olive oil for air frying

How To Make Egg Cabbage Pancake With Mediterranean Dip Step By Step With Photo:

  1. Cut the potatoes into thin juliennes and then in a bowl add water and put the potato julienne in that till you use them or completely cut other vegetables. It will help to drain out extra starch also potatoes will not turn brown in color. When all ingredients are ready just drain out the water and pat dry the potato juliennes.
  2. Wash all the vegetables very nicely then cut all the vegetables like potato, onion, cabbage, bell peppers, and carrot in fine julienne.
  3. Add all the finely sliced vegetables in a bowl and add all-purpose flour, salt to taste, and black pepper powder.
  4. Now crack and add 2 eggs into a bowl.
  5. Add chopped spring onion to this.
  6. Mix everything nicely with a hand or chopstick or spoon.
  7. If you feel the mixture is dry just add a little water and mix properly into a smooth mixture. It should not be very runny. Keep aside for 10 minutes when mixed properly.
  8. Now let’s prepare the Mediterranean dip. For that in a small bowl add all the chopped garlic, red bell pepper, jalapeno, red chili flakes, paprika, and salt to taste.
  9. Now heat olive oil in a small pan for tempering.
  10. Once the oil has reached the smoking point add the hot oil to the mixture.
  11. Mix well.
  12. Now add chopped coriander leaves and mix well.
  13. Take a plate and spread Greek yogurt or hung curd with a spoon.
  14. Now add the mixture we prepared for the dip. The dip is ready to keep aside.
  15. Air fryer method: Put parchment paper in the air fryer basket and add some vegetable pancake mixture to the paper.
  16. Now make a hole or space in the middle.
  17. Add an egg yolk in the middle.
  18. Now spray or brush some oil on the vegetable egg pancake.
  19. Now air fry them at 380 degrees F for 15 minutes. Then check and flip the pancake once you see golden brown and crisp on the top side.
  20. Now again air fry at 380 degrees F for 6 to 8 minutes.
  21. Once golden and crisp take it out with the help of a spatula. You can air fry 2 vegetable eggs pancake according to your air fryer size. Take out and serve hot.
  22. For pan frying method: Now add oil to a pan and spread nicely.
  23. On low-medium heat now add the pancake vegetable egg mixture to the pan.
  24. Now make a circle in the middle with the help of a chopstick or spoon. Add an egg yolk in the middle.
  25. Now fry for 10 minutes on medium flame. Now flip and fry for 5 minutes on medium flame. You can add 4 vegetable pancakes in a pan one at a time.
  26. Once golden and crisp take them out with the help of a spatula.
  27. Serve them hot with the Mediterranean dip we prepared. Enjoy.

What can we add to these egg cabbage pancakes?

Nothing unusual was purchased by me for my cabbage pancakes. Instead, I made use of every component I had on hand, and you can do the same. These additional vegetables might be delicious in the pancakes:

Shredded broccoli or Brussels sprouts, zucchini, bean sprouts, and radish.
You can add any type of meat to your pancakes in addition to vegetables. Try:

Shrimp salmon in a can chicken bacon pork shredded.

Important Suggestions To Keep In Mind

  • Cut all the vegetables in juliennes so that they can be easily shaped into a pancake and fry evenly. 
  • Use avocado oil or olive oil for frying 
  • If making vegan just avoid eggs and you are good to go for cabbage pancakes.

Storage Suggestion

You can store them in an air-tight container in the refrigerator for 2 to 3 days. When you want to consume just air fry them at 350 degrees F for 5 to 7 minutes.

Serving Suggestion
