You’ll thank yourself for making this 20-minute Air Fryer Chicken Bites no breading Keto-friendly on a hectic night! Whether added to a salad or vegetable bowl or eaten on their own, they offer a fantastic quick protein choice. Absolutely amazing for a game night or movie night.
Ingredients

- 1/2 cup – Yellow Bell Pepper chopped finely
- 8 slices – Jalapeno pickle
- 2 tbsp – Black Olives slices
- 2 tbsp – Red pepper pickles
- 1/2 cup – Onions finely chopped
- 1 cup – Fried chicken cubes (marinated with salt and pepper)
- 2 cup – Fried shrimped chopped(marinated with turmeric powder & salt)
- 1/2 cup – Red bell pepper or tomato chopped finely
- 1/2 cup – Fresh jalapeno sliced
- 7 to 8 3g – 3 gm net carb Low fat or low carb tortilla chips
- Extra virgin olive oil for frying
- 1/2 cup – Parsley finely chopped
- 1 cup – Cheddar cheese shredded
- 1 cup – Mozzarella cheese grated
Instructions
- Heat 2 tbsp olive oil in a pan and let it smoke. Add the chicken cubes.
- Fry on medium heat till they are fully cooked.
- Sprinkle salt and black pepper to taste.
- Mix well for 1 minute. Now take them out.
- In the same pan add 1 tbsp of olive oil. Add the chopped shrimp marinated with 1/2 tsp salt and 1/2 tsp turmeric powder.
- Mix well and fry on low heat for 3 to 4 minutes.
- Take the shrimp out when done. Took me 3 minutes on medium flame.
- Now take a muffin tray as I have an air fryer oven. Note: If you have a round basket air fryer then you can use muffin cups or silicon cups for air frying. Brush with a good amount of olive oil in the tray.
- Now add shredded cheddar cheese. Then add cooked chicken and fried shrimp.
- Now add jalapeno pickles and fresh slices, red pepper pickle slices, low-carb tortilla chips, and chopped onion.
- Now add shredded cheese, some more grated cheddar cheese, and red and yellow bell pepper.
- Add some black olives
- Now air fry for 20 to 25 minutes at 380 degrees F.
- Note: If using a round air fryer basket then use muffin butter cups or silicon cups and apply the same process as done above in the muffin tray. Grease oil nicely on the cups.
- Once done take them out with the help of a spoon and serve them hot. Be careful while taking them out they are quite hot.
- Serve hot with any choice of your dip.

Notes
- Grease the muffin tray very nicely with olive or avocado oil so that you can scrape the chicken bites easily with a spoon.
- Air fryer times differ as per your air fryer basket or oven so adjust the time according.
- It took me 20 minutes in the air fryer oven and 25 minutes in my round air fryer basket at 380 degrees F.
